‘Snowman’ Ham and Cheese Sandwiches

A fun twist on a classic ham and cheese sandwich which is perfect for a winter-wonderland themed lunchbox. You can use whichever bread you prefer as long as it’s easy to cut into using a cookie cutter. Play around with the fillings, too, if you like – you could fill these with tuna mayo or houmous and your child’s favourite veggies. Leftover carrot or cucumber can be added to lunchboxes as a bonus veggie snack. To complete the Snack-in-the-Snow Lunchbox  recipe try the ‘Snowball’ Mozzarella, Cherry Tomato and Basil Skewers and Snow-dusted Mini Choco-coconut Rice Cakes.

Ingredients

  • 4 slices of thick-cut sliced bread
  • 1 tsp of butter, softened
  • 2 slices of ham, turkey or salami
  • 2 slices of cheddar or gouda cheese
  • 0.25 cucumber, sliced into thin rounds
  • 1 small carrot, peeled
  • 4 black olives, pitted

Method

  • Step 1

    Using an 8cm round cookie cutter, cut circles out of the centres of the 4 slices of bread. Blitz leftover bread into breadcrumbs for future recipes. Spread 2 circles with 1 tsp butter. Using the cookie cutter again, cut circles out of your chosen cold cuts (ham, turkey or salami) and do the same with the slices of cheese – any excess can be chef’s treats. Layer up the meat and cheese on two of the bread circles, top with 2-3 cucumber slices and close the sandwiches with the remaining bread circles.
  • Step 2

    For the snowmen’s noses, cut 2 triangular noses out of a slice of the carrot using a small sharp knife. For the eyes, cut 2 olives in half and use 1 full half for one eye on each sandwich. Slice the remaining halves into half-moons and use these for a second winking eye for each sandwich. For the mouths, cut the 2 remaining olives into little cubes and form smiling mouths with the cubes for each sandwich.
  • Step 3

    Finally, using a small sharp knife, cut small slits into the top of the sandwich where you want your snowmen’s eyes, noses and mouths to go. Press the carrot noses and olive pieces into the slits firmly so that they’ll stay in place until lunchtime. Place sandwiches securely in the lunchbox.
