10-Minute Paloma Pavlova

With just 5 ingredients and 10 mins you can make this showstopper pud that is perfect for a party or Christmas buffet table. We’ve used ready-made meringue nests and canned cocktails for time-saving hacks you can use again and again with your favourite flavours.

Ingredients

  • 3 x 150ml tins Pink Grapefruit Paloma cocktails
  • 500ml double cream
  • 18 small meringue nests
  • 6 satsumas, peeled and sliced into circles
  • 4 tbsp pomegranate seeds

Method

  • Step 1

    1 Pour the paloma cocktails into a pan set over a high heat. Bring to the boil, then reduce the heat and simmer for 5 mins until thickened to a syrup consistency. Remove from the heat and pour into a jug to cool.
  • Step 2

    Meanwhile, pour the cream into a bowl and whisk until it forms soft peaks.
  • Step 3

    Spread a large spoonful of cream onto each meringue nest then set on a serving board in the shape of a wreath. Continue with the remaining meringues and cream.
  • Step 4

    Top with clementine slices, sprinkle with pomegranate seeds then drizzle over the syrup and serve.
