Ingredients
- 3 x 150ml tins Pink Grapefruit Paloma cocktails
- 500ml double cream
- 18 small meringue nests
- 6 satsumas, peeled and sliced into circles
- 4 tbsp pomegranate seeds
Method
Step 1
1 Pour the paloma cocktails into a pan set over a high heat. Bring to the boil, then reduce the heat and simmer for 5 mins until thickened to a syrup consistency. Remove from the heat and pour into a jug to cool.Step 2
Meanwhile, pour the cream into a bowl and whisk until it forms soft peaks.Step 3
Spread a large spoonful of cream onto each meringue nest then set on a serving board in the shape of a wreath. Continue with the remaining meringues and cream.Step 4
Top with clementine slices, sprinkle with pomegranate seeds then drizzle over the syrup and serve.
