
3-Minute Microwave Mug Toast

This quick and tasty ‘bread’ is gluten-free and ready in under five minutes from family cook Claudine Boulstridge. We’ve used Nutella and berries as toppings, but you can use any and all of Mum’s favourite additions. Ingredients
- 1 medium egg, beaten
- 0.25 tsp of baking powder
- 2 tbsp of unsalted butter
- 2 tbsp of coconut flour
- 1 handful of of raspberries
- 1 tbsp of whole milk or any of your choice
- 1 tbsp of nutella or nut butter of your choice
Method
Step 1
Place the butter in a large heatproof mug with straight sides or a small heatproof bowl and microwave on high (800W - 1000W) for 40 secs or until melted.Step 2
Add the coconut flour, a pinch of salt, the egg, baking powder and milk and stir well.Step 3
Return to the microwave and cook for another 2 mins on high.Step 4
Leave to cool completely before turning out of the mug onto a chopping board.Step 5
Cut the bread into 2-3 slices and toast.Step 6
Spread over the Nutella or nut butter and finish with raspberries or any fruit of your choice.
