
3 Onion Bhajis

Bhajis are one of the most popular Indian starters or side dishes. We put a SORTED twist on ours by using red and white onions as well as shallots to give an extra bit of sweetness. Ingredients
- 1 red onion
- 1 white onion
- 2 shallots
- 100 g of plain flour
- 1 tsp of curry powder
- 1 tsp of baking powder
- 1 pinch of salt
- 1 tsp of garam masala
- 1 tsp of chilli powder
Method
Step 1
Preheat the fryer to 180°C.Step 2
Peel, halve and slice the onions and shallots, keeping them all a roughly equal thickness.Step 3
Put the flour, spices and salt into a bowl. mix in 150ml of water a bit at a time to form a thick, sticky batter.Step 4
Add the onions to the batter and mix well.Step 5
Spoon a large tbsp of the batter into the fryer once it has reached temperature (test a small amount first) and fry for about 2 minutes in vegetable oil until they are crispy and golden brown.Step 6
Scoop them out of the oil and drain on some kitchen paper to absorb excessive amount of oil.Step 7
Mix the yoghurt, mango chutney and coriander in a bowl and serve with the onion bhajis.
