
4 Ingredient Strawberry Yoghurt Rice Pop Squares

These fruity squares are the ultimate back-to-school snack for the kids' lunch boxes. They also make a fantastic holiday kitchen activity to keep little hands busy, as there is no actual baking required. Using Greek yoghurt and freeze-dried strawberries, these treats are a simple way to create something delicious together at home. Just be sure to make enough, as they are sure to be a hit with the whole family. This recipe makes 16 squares.Time and servings

Ingredients
- 150g white chocolate, broken into pieces
- 38g freeze-dried strawberries, we used Giving Tree Strawberry Crisps
- 100g Greek yoghurt
- 100g rice pops
Method
Step 1
Line a 20cm square tin with baking parchment.Step 2
Melt the white chocolate in a heatproof bowl set over a pan of simmering water (make sure the bottom of the bowl doesn't touch the water) or in the microwave. Allow to cool for a few mins.Step 3
Meanwhile, whizz the freeze-dried strawberries in a blender until they resemble a powder.Step 4
Stir the yoghurt and strawberry powder into the white chocolate until combined. Add the rice pops and stir until they're fully coated.Step 5
Tip the mixture into the prepared tin and press down firmly with the back of a spoon to level. Chill in the fridge for at least 1 hr or until set. Cut into squares to serve.
