
Sausages with Bacon and Mushrooms on Mustard Mash

Ingredients
- 650 g of potatoes, peeled & sliced
- 1 bunch of spring onions, chopped
- 2 tablespoons of maille wholegrain mustard
- 1 tbsp of extra virgin olive oil
- 1 onion, sliced
- 8 chipolatas
- 2 back bacon rashers, cut into strips
- 155 g of button mushrooms, cut into quarters
- 100 ml of red wine
- 200 ml of beef stock
- 1.5 tsps of cornflour
Method
Step 1
Cook the potatoes in boiling salted water for about 15 minutes or until very soft. Drain, mash and stir in the spring onions and mustard.Step 2
Meanwhile, heat the oil in a frying pan and fry the sliced onion and sausages for 5 minutes.Step 3
Add in the bacon and mushrooms and continue cooking, stirring occasionally, until the sausages are almost cooked.Step 4
Pour over the red wine and stock and bring to the boil. Boil until slightly reduced and then add the cornflour blended with a little water. Cook until thickened and smooth.Step 5
Serve on a bed of mustard and onion mash.
