Ingredients
- 100 g of bulgur wheat
- 1 red onion, small, finely diced
- 2 tbsp of pomegranate seeds
- 100 g of flat leaf parsley, leaves picked and finely sliced
- 25 g of mint
- 1 lemon, juiced
- 2 tbsp of olive oil
- 3 ripe tomatoes, deseeded, green parts removeed, diced into small cubes
Method
Step 1
Place the bulgar wheat in a bowl and add 150ml boiling water. Leave for 10-20 minutes or until all the water has been absorbed, then fluff with a fork.Step 2
Place the tomatoes, onion, pomegranate and herbs in a large bowl and toss together well. Stir in the bulgar wheat. Drizzle over the oilive oil and lemon juice, season to taste and stir well to coat.
