Air Fryer Beetroot and Halloumi Fritters

Ingredients

  • 100g light halloumi, patted dry and coarsely grated
  • 250g raw beetroot, coarsely grated (wear gloves!)
  • 1 lemon, zested and juiced
  • 1 tsp dried parsley, plus a pinch
  • 1 tsp garlic paste
  • 1 tsp onion granules
  • 2 tsp chia seeds
  • 150g self-raising flour
  • 2 large eggs, beaten
  • 1 tbsp light olive oil
  • 1 (70g) bag rocket
  • 1 handful flat-leaf parsley, leaves picked
  • 4 dollops kefir yoghurt, to serve

Method

  • Step 1

    In a mixing bowl lined with kitchen towel, combine the halloumi, beetroot, half the lemon juice and all the zest. Stir in the dried parsley, garlic paste, onion granules, chia seeds and flour.
  • Step 2

    Season the beaten egg, then add to the bowl and mix well.
  • Step 3

    Remove the crisper trays from the air fryer and drizzle the base of the fryer with the oil, using a silicone brush to grease the whole surface. Set the temperature to 200°C and preheat for about 1 min (check the manufacturer’s instructions). Spoon in the mixture, creating 8 fritters about 2 cm thick and 6-7 cm in diameter, leaving gaps in between. Cook for about 15 mins, turning halfway (check to make sure they don’t catch).
  • Step 4

    Remove the fritters onto plates. Serve with rocket, parsley and yoghurt (seasoned with salt, pepper and a pinch of dried parsley), with the remaining lemon juice drizzled over.
