Ingredients

13 total
  • 2 eggs
  • 5 tbsp plain flour
  • 100g breadcrumbs
  • 2 x 235g M&S Scottish Smoked Haddock Fillets, cut to finger sized pieces
  • Spray oil
  • ½ red cabbage, finely shredded
  • 3 limes, 1 cut to wedges
  • 200g soured cream
  • 2 tsp chipotle paste, optional
  • 12 small tortillas
  • 4 tbsp pickled red onions
  • 2 jalapenos, sliced, optional
  • 4 tbsp coriander, leaves picked, optional

Method

6 steps
  1. Step 1

Crack the eggs into a shallow bowl and beat until combined. Put the flour and breadcrumbs into 2 separate bowls.

  2. Step 2

Dip the fish into the flour to coat then shake off any excess, dip into the egg and then the breadcrumbs to fully coat. Set aside and repeat with the remaining fish.

  3. Step 3

Set in the air fryer and spray with a little oil. Cook for 8-10 mins at 200C fan, until cooked through, golden and crisp. You may need to do this in batches.

  4. Step 4

Meanwhile, mix the red cabbage with the juice of 2 limes and a generous pinch of fine salt. Mix well and set aside to pickle lightly.

  5. Step 5

Mix the soured cream and chipotle, if using, then thin with a little water to your desired consistency.

  6. Step 6

Warm the tortillas to packet instructions. Serve topped with pickled cabbage, crispy fish, chipotle soured cream, pickled red onions, jalapenos and lime wedges.
