This super simple buttermilk-marinated chicken uses the air fryer for guaranteed tender chicken pieces covered in a golden crispy coating without the faff of deep-dat frying. Ingredients
- 250ml buttermilk
- 1 tsp dried oregano
- 500g mini chicken breast fillets
- 100g plain flour
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp freshly ground black pepper
- 1 tsp flaky sea salt
- 1 tbsp vegetable oil spray
Method
Step 1
Spoon the buttermilk into a large mixing bowl with the oregano, mix well then add the chicken fillets then toss to coat. Cover and chill for at least 4 hours, but overnight if you have time.Step 2
Put the flour, onion powder, garlic powder, freshly ground black pepper and salt into a separate mixing bowl and mix together with a fork.Step 3
Using tongs, or a pair of forks, remove 1 piece of chicken from the buttermilk marinade and add to the flour mixture. Toss to coat then transfer to a lined baking sheet, repeat until all the chicken is coated.Step 4
Spray the chicken pieces with vegetable oil spray then cook in a single layer in the air fryer for 25 mins at 200°C, turning halfway through, until the chicken is cooked through, golden and crisp.Step 5
Serve immediately with your favourite sauce.
