Ingredients

  • 2kg smoked gammon joint
  • 20 cloves
  • 4 tbsp runny honey
  • 2 tbsp orange juice
  • 1 tbsp vermouth
  • 2 tbsp apple cider vinegar
  • ½ tsp ground allspice
  • ½ tsp ground cinnamon
  • 2 star anise

Method

  • Step 1

    Heat the airfryer for 5 mins at 190°C.
  • Step 2

    Tightly wrap the gammon joint in foil and set in a roasting tin or dish. Transfer to the air fryer and cook for 1 hr 10 mins at 190°C.
  • Step 3

    Meanwhile, make the glaze. Put the honey, orange juice, vermouth, vinegar, allspice, cinnamon and star anise in a pan and mix well. Set over medium heat and bring to the boil, reduce to a simmer and bubble away over a low heat for 10 mins until slightly thickened.
  • Step 4

    After 1 hr 10 mins remove the gammon from air fryer. Discard the foil and return the gammon to the roasting tin or dish. Lightly score the fat in a diamond pattern then put a single clove in each diamond. Drizzle with half the glaze and return to the air fryer, and cook for a further 20 mins, pouring over the remaining glaze half way through.
  • Step 5

    Remove from the air fryer and allow to rest for 10 mins before carving and serving with your favourite sides.
