Ingredients
- 500g baby potatoes
- 1 tsp olive oil
- 5 large eggs
- 150g cottage cheese
- 1 tbsp grated parmesan
- 100g Brussels sprouts, shredded
- 25g kale, tough stalks discarded, finely sliced
- 75g broccoli, finely chopped
- 1 tbsp chopped fresh parsley
- 120g baby spinach, to serve
- 1 avocado, sliced, to serve
- 1 lemon, cut into wedges
Method
Step 1
Boil or steam the potatoes until tender. Halve any large ones, toss with the oil and season.Step 2
Meanwhile, preheat the air fryer to 170°C. Whisk the eggs, then stir in the cottage cheese and parmesan with the sprouts, kale, broccoli and parsley; season.Step 3
Pour the mixture into a silicone mould or a lined heatproof dish that fits in the air fryer basket. Cook for 12-15 mins until set and golden.Step 4
Divide the spinach and avocado between plates. Slice the frittata into 4 and place alongside with the potatoes. Serve with a wedge of lemon for squeezing over.
