Air Fryer Masala Lamb Chops

In her Air Fryer Masala Lamb Chops, the meat is marinated in a heady mix of spices before being cooked over the veg to add even more flavour. Another top tip: soak the spuds in water for 30 mins to remove starch, then drain and pat dry, so they won’t stick together when cooking.

Ingredients

  • 4 tsp garlic paste
  • 2 tsp ginger paste
  • 1 tsp chilli powder
  • 1 tsp ground fenugreek
  • 1 tsp garam masala
  • 1 tsp worcestershire sauce
  • 4 lamb cutlets, fat trimmed
  • 250g baby potatoes, halved if large
  • 1 cauliflower, broken into florets
  • 2 tsp ground cumin
  • 1 tsp ground turmeric
  • 2 tsp curry powder
  • 1 tbsp rapeseed oil
  • 300g tomatoes, chopped
  • 1 small handful mint leaves
  • 1 red chilli, sliced

Method

  • Step 1

    To make the marinade, combine 2 tsp garlic paste and 1 tsp ginger paste with the chilli powder, fenugreek, garam masala, worcestershire sauce and 2 tbsp water in a large dish; season. Add the lamb. Toss to coat, cover and chill for at least 2 hrs.
  • Step 2

    Put the potatoes and cauli into separate bowls. In a third bowl, combine the remaining 2 tsp garlic paste and 1 tsp ginger paste with the cumin, turmeric, curry powder, oil and 2 tbsp water; season. Add half the mix to the potatoes and the rest to the cauli; mix well.
  • Step 3

    Set the air fryer to 190°C and preheat for a couple of mins (check manufacturer’s instructions). Place the potatoes on the crisper trays; cook for 10 mins or until starting to soften, shaking halfway. Add the cauli; cook for 10 mins more or until starting to soften. Stir through the tomatoes; cook for 5-10 mins.
  • Step 4

    Put the lamb on the air fryer rack and set over the veg. Cook for 4 mins on each side or until cooked to your liking. Serve scattered with the mint leaves and sliced chilli.
