Air Fryer Pickle Crisps

Simple to make and value for money, homemade crisps have just become even easier with our air fryer recipe. Don’t throw out leftover boiled new potatoes - turn them into thin and crispy air fryer crisps that tick all the boxes for a snack or the perfect side to your sandwiches. Flavoured with often-discarded pickle juice they have a subtle tang that will keep you wanting more, we love these with a creamy homemade herby dip with added pickles for an extra touch of salty goodness. Ingredients

  • 400g white potatoes, very thinly sliced
  • 3½ tbsp pickle juice, from the jar, plus 3 pickle slices, finely chopped
  • 1 tsp olive oil
  • 100g soured cream
  • 2 tsp chives, finely chopped

Method

  • Step 1

    Put the potatoes in a large bowl and cover with cold water for 30 mins.
  • Step 2

    Drain, rinse and then pat dry. Return the potatoes to the dry bowl and toss with 3 tbsp pickle juice and oil, cover and set aside for 30 mins, or up to 2 hrs.
  • Step 3

    Set the air fryer to 200°C. Spread the potato slices in a single layer over the base of the air fryer drawer and cook for 6-8 mins until golden and crisp, shaking half way through. Repeat with remaining potato slices.
  • Step 4

    Meanwhile, mix the soured cream with remaining pickle juice, most of the chopped pickles and most of the herbs, then season with salt and freshly ground black pepper to taste.
  • Step 5

    Serve the pickle crisps piled up with soured cream dip on the side and sprinkle with remaining pickle and herbs to serve.
