Budget-friendly, low-effort and super-tasty, her clever Air Fryer Tortilla ‘Quiche’ uses tortilla wraps to create its crispy crust. Rosie keeps flavours fresh by topping the cheesy quiche filling with a salsa-style salad. If you like a bit of heat, serve with a drizzle of your favourite hot sauce. No air fryer? Simply line an 18 cm round cake tin with the tortilla, then bake in the oven at 200°C/180°C fan/gas 6 for 8 mins; add the filling and cook for 15 mins more. Looking for more brunch recipes? Ingredients
- 100g frozen mixed peppers, defrosted
- 1 salad onion, green and white parts separated and finely chopped
- 2 tortilla wraps
- 75g mature cheddar, grated
- 100g cherry tomatoes, quartered
- 1 small avocado, chopped
- 30g coriander, leaves picked
- 2 drizzles chilli sauce, to serve (optional)
Method
Step 1
Preheat the air fryer to 180°C. Tip the peppers and white salad onion into the drawer of the fryer while it heats up.Step 2
Once it reaches 180°C, remove the peppers and onion to a plate. Wipe the drawer with kitchen towel; place a tortilla inside so it covers the base and sides to make a ‘bowl’. Cook for 2 mins.Step 3
Remove the drawer, cover the base of the tortilla bowl with half the pepper and onion mixture, sprinkle in a quarter of the cheese, then pour over half the eggs. Season well and cook for 5 mins.Step 4
Pull out the drawer, stir briefly with a fork to redistribute the cooked egg, being careful not to pierce the tortilla base. Sprinkle over a further quarter of the cheese and cook for 5 mins. Remove to a plate; repeat with the second tortilla.Step 5
Toss the green salad onion with the tomato, avocado and coriander; season.Step 6
Serve the tortilla bowl with the salad and a drizzle of chilli sauce, if you like.
