A Peruvian condiment, this ‘green sauce’ from Lima-born chef Carlo Carozzi doubles as a dip for chips, sweet potato wedges and crudités. Made with jalapeños, coriander and white wine vinegar, it has plenty zing to it so will be sure to pep up your chips and dip station at a party or go down a treat as a snack with a group of friends. It takes just five minutes to whip up, too.

Ingredients

  • 3 jalapeños, plus extra to taste and garnish (optional)
  • 1 bunch of coriander, plus extra to garnish (optional)
  • 5 heaped tbsp of mayonnaise
  • 2 tbsp of white wine vinegar
  • 0.5 tsp of salt
  • 0.5 tsp of black pepper

Method

  • Step 1

    Put everything into a blender, add 1tbsp cold water and whizz until smooth (or use a stick blender).
  • Step 2

    Taste and blitz in more jalapeños if you prefer more heat. Garnish with extra chillies, coriander and a grind of black pepper, if you like. It’ll keep in the fridge in a sealed container for 1 week.
