Apple, pear and blackberry amaretti crumble

Ingredients

  • 125 g of plain flour
  • 125 g of ground almonds
  • 40 g of soft brown sugar
  • 5 bramley apples, peeled, cored & chopped into large chunks (for the filling)
  • 5 pears, ripe, peeled, cored & chopped into large chunks (for the filling)
  • 450 g of blackberries, for the filling
  • 1 lemon, zested & juiced (for the filling)
  • 50 g of soft brown sugar, for the filling
  • 125 g of unsalted butter, cold and cut into small cubes
  • 1 tub of vanilla ice cream or custard, to serve
  • 100 g of amaretti biscuits, crumbled up

Method

  • Step 1

    Preheat the oven to 190°C/170°C fan/gas 5. First make the crumble topping by gently rubbing the butter, flour and ground almonds together in a large mixing bowl until it resembles breadcrumbs. Stir through the sugar and amaretti biscuits then set aside.
  • Step 2

    Place all the filling ingredients together in an ovenproof baking dish roughly 28cm by 21cm and mix together well.
  • Step 3

    Cook the fruit in the oven without the crumble topping for 15 mins to soften, then remove and scatterer over the crumble mix.
  • Step 4

    Return to the oven for a further 30 mins.
  • Step 5

    Remove and set aside for 5 mins before serving. This dessert is great with vanilla ice cream or thick fresh custard.
  • Step 6

    Cook’s tip: This will freeze easily and you can also make individual portions. Try swapping the fruits – apricots and peaches work really well with the amaretti.
