Apple and oat pancakes are a great way to start your day, or your weekend mornings. These are classic American pancakes  jazzed up with apple and oats to make them fruity and chewy. To complete, top them with a compôte of summer berries. With hundreds of variations around the world, pancakes are one of the oldest grain-filled foods eaten by humans. Ingredients

  • 75 g of quaker oats
  • 2 eating apples
  • 125 g of plain flour
  • 1 tsp of baking powder
  • 2 tbsp of caster sugar
  • 1 pinch of cinnamon
  • 300 ml of semi skimmed milk
  • 2 egg whites
  • 1 tbsp of oil
  • 50 g of caster sugar
  • 125 g of frozen summer berries

Method

  • Step 1

    Place all the dry ingredients in a bowl and mix well.
  • Step 2

    Core, peel and cut the apples into small squares.
  • Step 3

    Combine the milk and apple pieces with the dry ingredients.
  • Step 4

    Whisk the egg whites to stiff peaks and gently fold into the oat mixture.
  • Step 5

    Place the berries and sugar in a pan.
  • Step 6

    Place on a high heat, bring to the boil and then reduce to a simmer.
  • Step 7

    Cook until the berries start to break down and the sauce begins to thicken.
  • Step 8

    Heat a drop of oil in a non-stick pan and place 1 1/2 tbsp of pancake mixture in the pan.
  • Step 9

    Cook on both sides until golden brown.
  • Step 10

    Serve warm with the compote.
