
Apple and Pear Crumble

The addition of pears to this otherwise classic apple crumble really sets it apart. Apples and pears work in perfect harmony to create a tart but subtly sweet flavour, and the added ginger works well to enhance the natural sweetness of the fruit. Serve it warm and top with vanilla ice cream, if you like.Time and servings

Ingredients
- 45 g of plain flour
- 45 g of wholemeal flour
- 120 g of butter, cold and cut into small pieces, plus extra for the baking dish
- 45 g of rolled oats
- 75 g of muscavado sugar
- 75 g of pecan nuts, roughly chopped
- 500 g of cooking apples, cored and cut into bite-sized pieces (approx. 2cm)
- 400 g of conference pears, cut into bite-sized pieces (approx. 3cm)
- 0.5 lemon, juiced
- 3 tsp of caster sugar
- 2 cm of piece of ginger, grated or minced
- 50 g of sultanas
- 1 tsp of ground cinnamon
- 1 tsp of vanilla extract
- 0.5 cup of vanilla ice cream or custard
Method
Step 1
Preheat the oven to 190°C/170°C fan/gas mark 5 and grease a rectangular baking dish with butter. In a medium bowl, add the flours, butter, oats and sugar. Using your fingertips, lightly rub the butter into the dry ingredients until a coarse breadcrumb texture is achieved. You could also pulse these ingredients together in a food processor if you have one, but be careful not to over-mix as you will lose the texture of the oats. Mix in the chopped pecan nuts then set aside.Step 2
In a separate bowl, toss the apples, pears, lemon juice, caster sugar, ginger, sultanas, cinnamon and vanilla extract until well combined. Transfer to the greased baking dish, then scatter over the crumble topping.Step 3
Bake the crumble in the oven for 50-55 mins. Check on the crumble after 30 mins and if the topping is already deeply golden brown, cover the crumble with tin foil for the remaining baking time.Step 4
Leave the finished crumble to stand for 5-10 mins before serving with vanilla ice cream or custard.
