
Apple Cider Drinking Vinegar

This simple recipe is great for any juice lovers and is a great substitute to coffee for that mid-morning energy boost.Time and servings

Ingredients
- 250 ml of apple cider vinegar, containing the mother
- 3 medium braeburn, gala or granny smith (or similar) apples (something with acidity and bite)
- 150 g of unrefined caster sugar
Method
Step 1
Dissolve sugar into the vinegarStep 2
Grate the apples, discard the core and add to the vinegar and sugar mixStep 3
Keep in cleaned sealed kilner jarStep 4
Leave for 3 days in the fridge and shake regularly (you don't want the apple that is out of the vinegar to go brown as this affects the freshness of the apple flavour that you want to capture)Step 5
Remove the apple before the freshness and acidity starts to disappear, which is normally after the 3 daysStep 6
After 72 hours/3 days are up, strain through muslin, do not waste any liquidStep 7
Throw away the dry pulp or even just eat it for breakfast with granola or somethingStep 8
Store the vinegar in the same kilner jar in or out of the fridge. The longer you leave it, the better it developsStep 9
To serve: 35ml of vinegar to 150/200ml soda works as a soft drink. Mild maple syrup or similar helps balance if it is too acidic, or add hot water & heather honey instead and drink it by the pint to start your day. Some vinegars are more potent than others, so once you have made one or two batches you can easily understand and predict outcomes.
