Ingredients

  • 40g rolled oats
  • 1 apple, cored (half grated, half chopped)
  • 2 tbsp raisins
  • ½ tsp ground cinnamon, plus a pinch
  • 150ml kefir
  • 2 tbsp maple syrup
  • 1 tbsp toasted coconut flakes
  • 1 tsp chia seeds

Method

  • Step 1

    Tip the oats into a mixing bowl and top with the half grated apple, raisins, cinnamon, chia seeds, kefir and 1 tbsp maple syrup. Stir well then cover and chill for at least 4 hours, but up to overnight.
  • Step 2

    Put the remaining half chopped apple into a bowl and drizzle with the remaining 1 tbsp maple syrup and a pinch of cinnamon then mix well. Cover and chill until needed.
  • Step 3

    Decant the oats into a bowl or jar, then spoon over the maple cinnamon apple and sprinkle with toasted coconut flakes to serve.
