
Apple Pie Overnight Oats

Ingredients
- 40g rolled oats
- 1 apple, cored (half grated, half chopped)
- 2 tbsp raisins
- ½ tsp ground cinnamon, plus a pinch
- 150ml kefir
- 2 tbsp maple syrup
- 1 tbsp toasted coconut flakes
- 1 tsp chia seeds
Method
Step 1
Tip the oats into a mixing bowl and top with the half grated apple, raisins, cinnamon, chia seeds, kefir and 1 tbsp maple syrup. Stir well then cover and chill for at least 4 hours, but up to overnight.Step 2
Put the remaining half chopped apple into a bowl and drizzle with the remaining 1 tbsp maple syrup and a pinch of cinnamon then mix well. Cover and chill until needed.Step 3
Decant the oats into a bowl or jar, then spoon over the maple cinnamon apple and sprinkle with toasted coconut flakes to serve.
