The apricot nectar adds a soft, sweet and fruity taste of summer to this Apricot Gin Fizz.

Ingredients
- 75ml apricot nectar
- ½ lemon, juiced to give 2 tsp
- 1 tsp runny honey
- 1 bottle or can soda water, to top up
- 1 apricot slice, to garnish (optional)
- 1 sprig mint, to garnish (optional)
Method
Step 1
Shake the apricot nectar, gin, lemon juice and honey in a cocktail shaker or clean lidded jar for 30 secs.Step 2
Pour into an ice-filled tumbler and top with the soda water. Garnish with an apricot slice and sprig of mint, if you like.
