Ingredients

  • 75ml apricot nectar
  • ½ lemon, juiced to give 2 tsp
  • 1 tsp runny honey
  • 1 bottle or can soda water, to top up
  • 1 apricot slice, to garnish (optional)
  • 1 sprig mint, to garnish (optional)

Method

  • Step 1

    Shake the apricot nectar, gin, lemon juice and honey in a cocktail shaker or clean lidded jar for 30 secs.

  • Step 2

    Pour into an ice-filled tumbler and top with the soda water. Garnish with an apricot slice and sprig of mint, if you like.
