This Aromatic Harissa Traybake from Al’Fez is a one-tray wonder. Spoon fragrant and spiced harissa paste over chicken and veg for big flavour with little effort. For a veggie version switch out chicken for sliced halloumi or stretch it out and add some cooked potatoes to the tray too. Ingredients
- 2 red onions, cut to thin wedges
- 2 peppers, chopped
- 2 courgettes, chopped
- 4 chicken breasts, approx. 600g
- 90g Al’Fez Harissa Paste
- 1 tbsp olive oil
- 1 lemon, cut into wedges
- 4 flatbreads
Method
Step 1
Heat the oven to 180°C/ 160°C fan/ gas 4. Tip the red onions, peppers, courgettes and chicken into a lipped roasting tray.Step 2
Dot over the harissa paste then mix together so everything is evenly coated in paste.Step 3
Spread in an even single layer and drizzle with oil. Roast for 30 mins, until the chicken is just cooked through and vegetables are tender.Step 4
Serve with lemon wedges for squeezing and flatbread to soak up all the juices.
