
Arthur's Mulled Wine

Ingredients
- 1 bottle of red wine
- 3 star anise
- 2 bay leaves
- 1 tsp of white peppercorns
- 1 tsp of cloves
- 1 tsp of cardamom, pods
- 1 tsp of allspice
- 1 whole nutmeg
- 1 stick of cinnamon
- 1 pinch of dried red chilli flakes
- 1 pinch of mustard seeds
- 0.5 tsp of five spice
- 150 g of sugar
- 1 lemon
Method
Step 1
Pour the sugar into a large deep frying pan and set on a moderate heat. The sugar will begin to melt. Take care to make sure the sugar doesn't burn and adjust the heat accordingly. Stir the sugar into the melted liquid and when it has caramelised add the spices.Step 2
Add star anise, cloves, cardamom, bay leaves and peppercorns and stir through the liquid. Now add the allspice, a pinch of dried red chilli flakes and half a teaspoon of five spice. Stir into the caramelised sugar.Step 3
Pour in the bottle of red wine and stir to dissolve the sugar. Bring the liquid to a gentle simmer then add the cinnamon stick and follow that by grating in a whole nutmeg.Step 4
Simmer the liquid for half an hour and serve with a lemon wedge.
