
Asian-inspired organic shredded chicken salad

This bright salad is made with crunchy organic carrot and

Ingredients
- 4 slices of ready-cooked chicken, (can use up to 6 slices)
- 3 organic carrots, (cut into fine matchsticks with a julienne peeler or, grated)
- 1 organic apple, (cut into sticks or grated)
- 2 tbsp of mint, (leaves chopped)
- 2 tsp of caster sugar, (for the dressing)
- 1.5 limes, (juice only, for the dressing)
- 2 tbsp of fish sauce, (for the dressing)
- 1 tbsp of rapeseed oil, (for the dressing)
- 1 red chilli, (finely chopped, deseeded if you like it less hot, for the dressing)
Method
Step 1
Combine the dressing ingredients and stir to dissolve the sugar.Step 2
Combine the chicken, carrot and apple together with the chopped mint. Drizzle over the dressing and toss lightly.
