
Avocado & Mozzarella Quesadillas

Kick off your week with this quick, easy veggie recipe. Quesadillas are great for lunch or dinner. We’ve added avocado & mozzarella for extra gooeyness, whilst the Jalapeños give it that extra kick. All melted together in a Whole Wheat Tortilla. The perfect meal for a Meat Free Monday. Enjoy! Time and servings

Ingredients
- 100 ml of salsa
- 200 g of grated cheese
- 3 avocados
- 8 santa maria soft tortillas with whole wheat
- 250 g of mozzarella
- 3 tomatoes
- 2 tbsp of santa maria green jalapeños
- 1 tbsp of oil
Method
Step 1
Grate the cheese and slice the mozzarella and tomatoes. Chop the avocados in half, scoop them out of their shell and cut in thin slices. Chop the Jalapeños.Step 2
Spread cheese, mozzarella, sliced tomato and avocado on four of the Tortillas.Step 3
Drizzle salsa verde and add the Jalapeños.Step 4
Place a Tortilla wrap on top of each prepared wrap and press gently.Step 5
Fry your Quesadillas in oil, in a medium hot pan on both sides, until the Tortillas are golden and the cheese has melted.Step 6
Cut each Quesadilla in triangles and serve!
