
Avocado and Crab Pan Waffles

For a
fast and fabulous brunch, try Avocado and Crab Pan Waffles. Food writer Silvana Franco makes
these in a griddle pan, so you don’t need a waffle iron. If your avocados are a little on the hard side, pop them in
a fruit bowl with a banana: the gases released by the banana will help them to
ripen faster. For a special weekend brunch, pair this with a Pink Screwdriver –
the creaminess of the avocado will
work well with the cocktail’s tart flavour and zingy lime and chilli salt rim.Time and servings

Ingredients
- 2 extra-large avocados
- 1 lime, juiced
- 0.5 tbsp of olive oil
- 4 salad onions, thinly sliced
- 2 tsp of chilli flakes
- 100 g of fresh crab meat (we used a mix of brown and white)
- 2 tbsp of white wine vinegar
- 2 tsp of caster sugar
- 1 tsp of salt
- 0.5 a small cucumber, thinly sliced
- 1 tbsp of dill, chopped
- 225 g of self-raising flour
- 0.5 tsp of baking powder
- 2 large eggs
- 300 ml of semi-skimmed milk
- 50 g of butter, melted, plus 1 knob
- 50 g of mixed radishes, thinly sliced
Method
Step 1
For the pickle, combine the vinegar, 1 tsp sugar and ½ tsp salt. Mix in the radishes and cucumber; set aside.Step 2
For the waffles, stir the flour, baking powder, sugar and salt in a large bowl; make a well in the centre. In a jug, beat the eggs, milk and butter; stir into the well until smooth.Step 3
Wipe a 26cm non-stick griddle pan with the knob of butter using kitchen towel or a pastry brush. Put on a medium heat; pour in the batter. Cook for 6-8 mins until golden, then flip over and cook for 3-4 mins.Step 4
Mash the avocados until smooth. Stir in the lime juice, olive oil, spring onion, chilli flakes and crab; season.Step 5
Drain the pickle; stir in the herbs.Step 6
Cut the waffle into triangles. Top with the avocado and pickle to serve.
