An exotic twist to a family favourite.  Ideal for a children’s treat, or a healthy, energy-boosting snack for the whole family.  Simple, easy to make but impressive nonetheless. The flapjacks are a sure winner and are as good for you as they are flavoursome!

Ingredients

  • 1 avocado, peeled, stoned and cut into chunks
  • 125 g of butter
  • 125 g of demerara sugar
  • 5 tbsp of golden syrup
  • 225 g of porridge oats
  • 1 tsp of ground ginger

Method

  • Step 1

    Preheat the oven to 190C, 375F, Gas Mark 5. Grease a 20cm sandwich tin.
  • Step 2

    Place the butter, sugar and syrup in a large pan. Heat until melted.
  • Step 3

    Add the oats, avocado and ginger and mix well.
  • Step 4

    Spoon into the tin and flatten using the back of a metal spoon.
  • Step 5

    Bake in the oven for 20 minutes. Cool for 15 minutes in the tin, before scoring in to wedges.
  • Step 6

    When completely cool, turn out and cut. Do not attempt to cut until completely cool.
