
Avocado Flapjacks

exotic twist to a family favourite.
Ideal for a children’s treat, or a healthy, energy-boosting snack for
the whole family. Simple, easy to make
but impressive nonetheless. The flapjacks are a sure winner and are as good for
you as they are flavoursome!Time and servings

Ingredients
- 1 avocado, peeled, stoned and cut into chunks
- 125 g of butter
- 125 g of demerara sugar
- 5 tbsp of golden syrup
- 225 g of porridge oats
- 1 tsp of ground ginger
Method
Step 1
Preheat the oven to 190C, 375F, Gas Mark 5. Grease a 20cm sandwich tin.Step 2
Place the butter, sugar and syrup in a large pan. Heat until melted.Step 3
Add the oats, avocado and ginger and mix well.Step 4
Spoon into the tin and flatten using the back of a metal spoon.Step 5
Bake in the oven for 20 minutes. Cool for 15 minutes in the tin, before scoring in to wedges.Step 6
When completely cool, turn out and cut. Do not attempt to cut until completely cool.
