
Avocado Houmous

Is it guacamole or is it houmous? This smooth, creamy dip is the best of both worlds. Serve it with veggies or toasted pitta – we've gone for carrots, radishes and sugar snap peas – and let everyone dig in. It couldn't be easier to make either, all you need is five minutes and a blender. Time and servings

Ingredients
- 1 handful of fresh coriander
- 2 tbsp of lemon juice
- 1 ripe avocado, roughly chopped
- 400 g of chickpeas, drained and rinsed
- 1 clove of garlic, finely chopped
- 2 tbsp of extra virgin olive oil
Method
Step 1
Combine all the ingredients in a food processor and blend until smooth. Add a touch of water, if needed, to loosen. Season with sea salt to tasteStep 2
Serve in a bowl with an extra drizzle of oil and chopped up veggies or toasted pitta strips to dip – we used carrots, radishes, tomatoes and sugar snap peas.
