
Baby Birthday Muffins

There is muffin better than this baby-friendly birthday cake recipe. Creamy Greek style yoghurts are great mixed into muffin mixture for an added source of calcium and add a delightful creaminess to the batter.Time and servings

Ingredients
- 35 g of cherries, destoned & chopped
- 1 egg, lightly beaten
- 1 large very ripe banana
- 1 pouch of little freddie luscious cherry greek style yoghurt
- 0.5 tbsp of olive oil, (plus extra for greasing)
- 115 g of plain flour
- 0.5 tsp of bicarbonate of soda
- 6 raspberries, halved, To decorate
Method
Step 1
Preheat the oven to 160°c fan assisted/180°c/gas 4 and grease a mini muffin tin with a little olive oil.Step 2
Lightly beat the egg in a mixing bowl, then add mashed banana, 50g of Little Freddie Cherry Greek Style Yoghurt (save the remaining yoghurt for decorating!) and olive oil. Mix well.Step 3
Sieve in the flour and bicarbonate of soda then fold to combine. Depending on how large the bananas are, you may find the mix is a little thick. If it is, add a tiny dash of whole milk and stir again, until the mixture drops off a spoon. Stir through the chopped cherries.Step 4
Divide the mixture between the mini muffin tin, then bake for 15-20 minutes, or until a toothpick comes out clean. Allow to cool.Step 5
Once cool, use the remaining yoghurt to ice the tops and finish with half a raspberry. Serve and enjoy!Step 6
