
Bacon Wrapped Avocado Fries

This recipe was born from a love of bacon, avocado and our version of chipotle honey. The secret to success with this recipe is to cover as much of the avocado as possible with the bacon. The main reason for this is that it protects the avocado from overcooking, another reason is that who doesn’t love extra bacon? In our recipe we served these delicious honey glazed bacon wrapped avocado fries with a boiled egg as an alternative for toast. The ultimate snack or side.Time and servings

Ingredients
- 2 ripe avocados, not too soft
- 300 g of streaky bacon
- 1 tbsp of gran luchito smoked chilli honey glaze
- 4 free range eggs
Method
Step 1
Cut the avocados in half and remove the stone.Step 2
Slice the avocado length ways about 2.5cm apart through the flesh down to the skin.Step 3
With a spoon, carefully remove the flesh so it comes out in large chunks.Step 4
Slice each rasher of bacon in half-length ways and wrap each chunk of avocado in 2 or 3 pieces or until more or less covered (this is a little fiddly, but you'll get it).Step 5
Pre-heat the grill to its highest setting.Step 6
Place the wrapped avocado chunks onto a baking tray and pop under the grill as close to the heat as possible.Step 7
Turning occasionally, allow to begin going crispy all over.Step 8
Either microwave the Gran Luchito Smoked Chilli Honey in a bowl for a few seconds until is nice and runny, or simply add a very small splash of hot water and mix.Step 9
Brush the honey onto the bacon all over and return to the grill.Step 10
Keep your eye on it now as it will burn quickly.Step 11
Soft-boil the eggs by adding them to boiling water and continuing to boil for about 5 mins. Allow to cool slightly in an egg cup then remove the top.Step 12
Dip your delicious soldiers into the egg and enjoy!
