
Baileys Choco Mousse

Chocolate mousse is a much-loved pud, because it’s light, creamy and packs a powerful chocolate punch. This version adds Baileys and chocolate shavings to add an indulgent touch. This taste sensation takes just 10 minutes to make – though it does need at least three hours in the fridge to chill.Time and servings

Ingredients
- 1 tsp of unsalted butter
- 250 ml of double cream
- 150 g of dark chocolate, chopped, plus extra 50g shavings to serve
- 2 medium eggs, separated
- 200 ml of baileys original irish cream
Method
Step 1
Put the chocolate in a heatproof bowl and set over a pan of simmering water to melt, ensuring the base of the bowl doesn’t touch the water. Remove from the heat, allow the chocolate to cool for 5 mins then beat in the egg yolks and butter.Step 2
Lightly whip the cream and Baileys until soft peaks are formed, then fold half into the chocolate mix.Step 3
Whisk the egg whites until just stiff, then carefully fold into the chocolate mixture.Step 4
Spoon half the chocolate mousse into four medium serving glasses, followed by half the chocolate shavings and then half the whipped Baileys and cream.Step 5
Repeat the layers and top with the remaining chocolate shavings.Step 6
Place in the fridge covered for 3 hours or overnight. No picking! (well, maybe just a bit…) Serve with a flourish to the sound of oohs and ahs.
