Baked cauliflower and black daal

Ingredients

  • 2 tbsp of patak’s bhuna spice paste
  • 1 ocado organic cauliflower
  • 1 tbsp of olive oil
  • 2 packs of jamie oliver black daal
  • 1 handful of coriander leaves, to serve
  • 1 handful of mint leaves, to serve
  • 1 spoon of natural yogurt, to serve

Method

  • Step 1

    Preheat oven to 190°C/170°C fan/gas 5 and line a roasting tin with foil.
  • Step 2

    Trim the base of the cauliflower so that it sits flat. Cut a cross in the base and pull off the large leaves.
  • Step 3

    Mix the paste and oil together and rub it all over the cauliflower before putting it in the tray. Tip a small glass of water into the tray and place in the oven to roast for 1 hr. Remove and baste the cauliflower with the juices every 20 mins.
  • Step 4

    Place the daal into a saucepan with a splash of water and heat gently for 5-6 mins while the cauliflower is cooking.
  • Step 5

    Serve the daal with the cauliflower, with some natural yogurt and fresh herbs.
