
Baked Cheese

This baked cheese is a creative, deliciously indulgent way to use up bits of leftover cheese from a cheeseboard. Use whatever cheese you have to hand and look forward to diving into a pool of molten cheesy heaven. Serve alongside your favourite fondue dippers like gherkins, bits of grilled meat and chunks of toasted bread.Time and servings

Ingredients
- 1 tsp of olive oil
- 250 ml of dry white wine
- 1 lemon, juiced
- 1 tbsp of plain flour
- 1 garlic clove, grated or crushed
- 300 g of cheddar, (any variety), grated
- 100 large handful of blue cheese eg. stilton, cashel blue, dolcelatte), cut into small pieces
- 100 g of brie (or any similar soft cheeses like camembert), cut into small pieces
- 2 rosemary sprigs, , needles only, roughly chopped
- 1 tsp of runny honey, to serve
Method
Step 1
Ensure all of the cheese is at room temperature before starting the recipe.Step 2
Preheat the oven to 180°C/160°C fan/gas 4.Step 3
Add the olive oil, wine, lemon juice, flour and garlic to an oven-proof baking dish (one you’ll be happy to bring to the table to serve out of) and whisk to combine. Transfer to the oven and cook for 10-15 mins until the mixture is steaming or gently simmering. Remove from the oven and whisk again until smooth.Step 4
Put all of the cheese in the dish. Sprinkle over the rosemary and stir to combine. Season with a pinch of salt and coarse ground black pepper, then bake in the oven for 20 minutes until the cheese begins to melt together and starts bubbling. Remove from the oven and stir together, then return to the oven and bake for a further 15 mins.Step 5
Remove from the oven and give the cheese a final stir until well-combined. Leave to sit for 5 mins before drizzling with the honey and serving with your choice of dippers.
