
Baked Fish with Tomato, Garlic and Mediterranean Herbs Balsamic Glaze

Ingredients
- 2 tbsp of extra virgin olive oil
- 700 g of cod
- 1 lemon, juiced and zested
- 0.25 cup of fresh basil and/or parsley
- 1 pinch of salt
- 1 can of chopped tomatoes
- 1 drizzle of villa modena mediterranean balsamic glaze
- 1 pinch of black pepper
- 2 tbsp of minced onion
Method
Step 1
Place the fish fillets in an oven-proof dish.Step 2
Combine the lemon juice and zest, olive oil, herbs, salt and pepper and pour over the fish.Step 3
Leave to marinate for 2 hours.Step 4
Preheat the oven to 180C.Step 5
Arrange the tomatoes and onions over the fish.Step 6
Bake the fish, covered for 20-30 minutes, until the fish flakes easily.Step 7
Pour on the Villa Modena Mediterranean Herbs Balsamic Glaze to taste.
