Ingredients

  • 1.8 kg of fresh whole salmon, gutted and cleaned
  • 1.8 kg of sea salt
  • 1 bunch of fresh thyme, leaves roughly chopped
  • 1 bunch of fresh basil, leaves rouchly chopped
  • 1 bunch of fresh sage, leaves roughly chopped
  • 4 eggs, beaten
  • 1 lemon, thinly sliced

Method

  • Step 1

    Preheat oven to 170C.
  • Step 2

    Mix salt and eggs to form a grainy texture.
  • Step 3

    Place foil on a large baking sheet and spread out half the salt/egg mixture, then place the salmon on top.
  • Step 4

    Stuff the cavity with lemon slices and herbs mixed together.
  • Step 5

    Cover the salmon with the remaining salt/egg mixture and cook for 45 minutes.
  • Step 6

    Remove from the oven and remove the crust. Discard the stuffing and skin, then serve.
