
Baked Salmon with a Salt Crust

Ingredients
- 1.8 kg of fresh whole salmon, gutted and cleaned
- 1.8 kg of sea salt
- 1 bunch of fresh thyme, leaves roughly chopped
- 1 bunch of fresh basil, leaves rouchly chopped
- 1 bunch of fresh sage, leaves roughly chopped
- 4 eggs, beaten
- 1 lemon, thinly sliced
Method
Step 1
Preheat oven to 170C.Step 2
Mix salt and eggs to form a grainy texture.Step 3
Place foil on a large baking sheet and spread out half the salt/egg mixture, then place the salmon on top.Step 4
Stuff the cavity with lemon slices and herbs mixed together.Step 5
Cover the salmon with the remaining salt/egg mixture and cook for 45 minutes.Step 6
Remove from the oven and remove the crust. Discard the stuffing and skin, then serve.
