Baked Salmon with Tamari Noodles and Crunchy Broccoli

Fresh and light, this baked salmon parcel has everything you need for a fast and flavourful midweek dinner. Succulent salmon is cooked with sesame, crunchy broccoli and noodles with a welcoming hit of umami, and is ready in under 30 minutes. This recipe is so simple you'll be making it time and time again.

Ingredients

  • 4 rice noodle vermicelli nests
  • 300 g of tenderstem broccoli
  • 2 large garlic cloves, finely chopped
  • 3 cm of ginger, finely chopped
  • 4 salmon fillets
  • 4 tbsp of toasted sesame oil
  • 4 spring onions, sliced
  • 2 tbsp of sesame seeds
  • 4 tbsp of tamari

Method

  • Step 1

    Preheat the oven to 200°C/180°C fan/gas 6. Soak the noodles and broccoli in boiling water in a heatproof bowl for 1-2 mins or until just tender. Drain and leave to one side.
  • Step 2

    In a medium bowl mix together the tamari, garlic and ginger. Add the noodles and broccoli and toss together.
  • Step 3

    Lay 4 sheets of foil with a layer of baking paper over the top, big enough so it can close with an overlap. Add the noodles in the middle of each sheet, top with the salmon and massage in 1 tbsp of sesame oil and a pinch of salt and pepper. Add the broccoli and top each parcel with sliced spring onions. Close each parcel so it is sealed but not too tight.
  • Step 4

    Evenly space out the salmon parcels on a large baking tray. Cook for 15 mins or until cooked through. Remove from the oven and carefully open each parcel and top with a sprinkling of sesame seeds, if you like.
