A tasty vegetarian version of this popular, spiced Indian rice dish.

Ingredients

  • 1 handful of toasted flaked almonds
  • 1 pack of tilda pilau rice
  • 250 g of baby potatoes, cooked
  • 1 onion
  • 1 clove of garlic, chopped
  • 1 handful of okra
  • 1 handful of sultanas
  • 4 tablespoons of natural yoghurt
  • 1 handful of coriander, chopped
  • 1 tbsp of garam masala

Method

  • Step 1

    Dice 250g of cooked baby potatoes and pan-fry in oil with a sliced onion until golden. Stir in 1 tablespoon of garam masala and 1 clove of chopped garlic.
  • Step 2

    When the potatoes are golden and spices aromatic, add a few slices of okra. After about three minutes, stir in the Tilda Pilau rice, some toasted flaked almonds and some golden sultanas.
  • Step 3

    When the rice is piping hot, add 4 tablespoons of natural yoghurt. Serve immediately with a handful of chopped coriander.
