
Baked Vegetable Biryani

A tasty vegetarian version of this popular, spiced Indian rice dish.Time and servings

Ingredients
- 1 handful of toasted flaked almonds
- 1 pack of tilda pilau rice
- 250 g of baby potatoes, cooked
- 1 onion
- 1 clove of garlic, chopped
- 1 handful of okra
- 1 handful of sultanas
- 4 tablespoons of natural yoghurt
- 1 handful of coriander, chopped
- 1 tbsp of garam masala
Method
Step 1
Dice 250g of cooked baby potatoes and pan-fry in oil with a sliced onion until golden. Stir in 1 tablespoon of garam masala and 1 clove of chopped garlic.Step 2
When the potatoes are golden and spices aromatic, add a few slices of okra. After about three minutes, stir in the Tilda Pilau rice, some toasted flaked almonds and some golden sultanas.Step 3
When the rice is piping hot, add 4 tablespoons of natural yoghurt. Serve immediately with a handful of chopped coriander.
