
Baked Vegetable Spring Rolls

Lisa's Tip: try serving these with teriyaki, soy or sweet chilli sauce! The best thing about them is they are baked not fried. They are crispy without the added calories of frying. You would never deep-fry your spring rolls again once you taste this!Time and servings

Ingredients
- 1 pack of jus rol filo pastry sheets, 6 sheets in total
- 200 g of free range medium egg noodles, cooked, straight to wok
- 100 g of beansprouts
- 2 large carrots, grated
- 1 can of sliced mushrooms, drain off excess liquid
- 2 tsp of sesame oil
- 6 tbsp of sunflower oil, for brushing the filo
- 1 tbsp of sweet chilli sauce
- 1 pinch of sea salt
- 1 sprinkle of black pepper
- 1 sprinkle of sesame seeds
Method
Step 1
Preheat the oven to 200°C / 400°F / Gas 6Step 2
Place the canned mushrooms in a sieve and push through to release any water.Step 3
In a large mixing bowl add the egg noodles, grated carrot, beansprouts and mushrooms, using a knife and fork cut through the noodles.Step 4
Season with cracked black pepper and sea salt.Step 5
Add the sesame oil, and sweet chilli sauce.Step 6
Lay 2 stacks of filo sheets on work surface and using a sharp knife, cut stack into two equal strips down its length.Step 7
Cut each strip into three equal squares.Step 8
You will end up with the stack cut into 6 equal squares (you will end up with 18 in total)Step 9
Keep the squares that you are not using covered with cling film and a tea towel to prevent drying out.Step 10
Lay two squares on the surface, using a pastry brush, brush the top sheet with sunflower oil.Step 11
Place approximately 1 tablespoon of the vegetable mixture in the centre of spring roll wrappers.Step 12
Roll wrappers around the mixture, folding edges inward to close.Step 13
Moisten the end with a brush of oil at the seams to seal.Step 14
Arrange spring rolls in a single layer on a medium baking sheet seam side down.Step 15
Brush with sunflower oil, sprinkle with sesame seeds.Step 16
Bake in the preheated oven 20-25 minutes, until hot and lightly browned.Step 17
For crispier spring rolls, turn over after 10 minutes (to give both sides 10 minutes on each side). Enjoy!
