Ingredients

  • 75g unsalted butter, melted, plus extra for the dish
  • 200g digestive biscuits, crushed, plus 1 biscuit, to decorate
  • 4 (approx.) bananas, sliced, plus a few extra slices for decoration
  • 500g ready-made custard
  • 300ml whipping cream
  • 1 heaped tsp icing sugar
  • 1 tsp vanilla bean paste

Method

  • Step 1

    Preheat the oven to 180°C/ 160°C fan/gas 4. Grease a 25 cm pie dish with butter; set aside.
  • Step 2

    Put the crushed biscuits in a bowl, pour over the melted butter and mix well. Tip the mixture into the dish and press it firmly into the base and up the sides. Bake for 8 mins; leave to cool completely.
  • Step 3

    Layer half the sliced bananas onto the base, then top with half the custard. Repeat with another layer of bananas followed by the remaining custard. Chill for at least 4 hrs, or overnight if helpful.
  • Step 4

    In a large bowl, whip the cream, icing sugar and vanilla bean paste to soft peaks. Spread it over the pie filling with a spatula, smoothing the surface a little, then top with the extra banana slices. Finish by crumbling over the remaining biscuit. Divide between bowls and enjoy.
