
Banana Loaf

Celebrate the long weekend with this wonderfully simple banana bread. Made with Billington’s Unrefined Golden Caster Sugar, it has a lovely depth of flavour and a soft, golden sponge. It is a great way to use up over-ripe bananas, adding natural sweetness and moisture to every slice. Enjoy it fresh for an Easter brunch, or slice and freeze it for an easy treat whenever you fancy.Time and servings

Ingredients
- 125g unsalted butter, softened
- 175g Billington's Unrefined Golden Caster Sugar
- 2 eggs, medium
- 3 ripe bananas, 2 mashed and 1 sliced lengthways
- 1 tbsp milk
- 1 tsp Nielsen-Massey Vanilla Extract
- 225g self-raising flour
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1 tsp lemon juice, optional
Method
Step 1
Heat the oven to 180°C/160°C fan/gas 4. Grease and line a 2lb loaf tin with baking paper.Step 2
In a large bowl or a stand mixer, beat together the butter and Billington's Unrefined Golden Caster Sugar on a high speed for 3 mins, or until light and fluffy.Step 3
Add the eggs one at a time, whisking together between each addition. Next, stir in the 2 mashed bananas and vanilla extract until combined.Step 4
Sift the flour, baking powder and ground cinnamon into the bowl. Beat together for a few seconds until just combined.Step 5
Pour the mixture into the prepared tin and top with the sliced banana. Brush the banana with a little lemon juice to prevent it discolouring in the oven.Step 6
Bake for 1h, or until a skewer inserted comes out clean. Leave to cool in the tin for 5 mins, then turn out onto a wire rack to cool fully before slicing.
