Celebrate the long weekend with this wonderfully simple banana bread. Made with Billington’s Unrefined Golden Caster Sugar, it has a lovely depth of flavour and a soft, golden sponge. It is a great way to use up over-ripe bananas, adding natural sweetness and moisture to every slice. Enjoy it fresh for an Easter brunch, or slice and freeze it for an easy treat whenever you fancy.

Ingredients

  • 125g unsalted butter, softened
  • 175g Billington's Unrefined Golden Caster Sugar
  • 2 eggs, medium
  • 3 ripe bananas, 2 mashed and 1 sliced lengthways
  • 1 tbsp milk
  • 1 tsp Nielsen-Massey Vanilla Extract
  • 225g self-raising flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 tsp lemon juice, optional

Method

  • Step 1

    Heat the oven to 180°C/160°C fan/gas 4. Grease and line a 2lb loaf tin with baking paper.
  • Step 2

    In a large bowl or a stand mixer, beat together the butter and Billington's Unrefined Golden Caster Sugar on a high speed for 3 mins, or until light and fluffy.
  • Step 3

    Add the eggs one at a time, whisking together between each addition. Next, stir in the 2 mashed bananas and vanilla extract until combined.
  • Step 4

    Sift the flour, baking powder and ground cinnamon into the bowl. Beat together for a few seconds until just combined.
  • Step 5

    Pour the mixture into the prepared tin and top with the sliced banana. Brush the banana with a little lemon juice to prevent it discolouring in the oven.
  • Step 6

    Bake for 1h, or until a skewer inserted comes out clean. Leave to cool in the tin for 5 mins, then turn out onto a wire rack to cool fully before slicing.
