
Banana Strawberry Muffins

Three different fruits in one muffin sounds too good to be true, right? Not when it comes to these delicious banana and strawberry muffins. The elusive third fruit comes in the form of unsweetened apple sauce which lends a moreish moistness to the muffins. These work perfectly as a lunchbox snack for little ones who don’t enjoy eating fruit in its raw form. Ingredients
- 3 bananas, the more ripe the better
- 25 g of honey
- 80 g of apple sauce
- 2 eggs
- 1 tsp of vanilla extract
- 120 g of plain flour
- 100 g of wholemeal flour
- 1 tsp of baking soda
- 1 tsp of ground cinnamon
- 0.5 tsp of salt
- 120 g of strawberries, roughly chopped into small pieces
Method
Step 1
Preheat the oven to 190°C/170°C fan/gas mark 5. Place 12 paper muffin cases in a 12-hole muffin tin and set aside.Step 2
In a large bowl, mash the bananas well. Add the honey, apple sauce, eggs and vanilla extract and mix well.Step 3
In another smaller bowl, combine the flours, baking soda, cinnamon and salt and mix well. Add the dry mixture to the wet mixture and stir to combine thoroughly. Add in the chopped strawberries and stir well.Step 4
Divide the mixture evenly between the 12 paper muffin cases and bake in the oven for 15-20 mins until risen and golden. Transfer them to a wire rack to cool completely before packing them into the lunchboxes.
