
Banana Yoghurt Pots with Sticky Date Caramel

This healthier take on banoffee is a great snack or not-too-naughty dessert. The fudgy-textured 'caramel' is made simply with dates and almond milk and has a great toffee flavour. This dish requires no cooking, takes only 8 minutes to put together and uses just five ingredients. It really couldn't be any more low-maintenance! Time and servings

Ingredients
- 250 g of dates, chopped and pitted
- 150 ml of almond milk (or water)
- 2 bananas, peeled and sliced
- 100 g of pecans
- 450 g of greek yoghurt
Method
Step 1
To make the date caramel, whizz 250g chopped, pitted dates in a blender with 150ml water or almond milk, until they form a paste. If using a dried variety of dates it helps to soak them in hot water for a few minutes before.Step 2
Take 4 small glasses and, in each one, layer a sprinkle of roughly chopped pecans (or other nuts of your choice), 1tsp date caramel, a few banana slices and 2tbsp of greek yogurt. Repeat. Top off with any leftover pecans, banana and caramel.
