Ingredients

  • 1 aubergine, sliced into fingers
  • 1 tsp cornflour
  • 2 tbsp groundnut oil
  • 8 bao buns
  • 2 tbsp (approx.) hot honey
  • 8 tsp hoisin sauce
  • ½ cucumber, cut into matchsticks
  • 2 salad onions, finely sliced
  • 1 red chilli, finely sliced
  • 40g dry roasted peanuts, roughly chopped (optional)

Method

  • Step 1

    Preheat the oven to 240°C/220°C fan/gas 9. Put the sliced aubergine into a roasting tin and season well. Toss with the cornflour and drizzle over the groundnut oil; roast for 15 mins until soft.
  • Step 2

    Steam the bao in the microwave as per pack instructions. Remove the aubergine from the oven and drizzle with the hot honey; divide between the bao.
  • Step 3

    Top with hoisin sauce and the prepped cucumber, salad onions and chilli. Sprinkle with chopped peanuts, if you like.
